Made with a unique mixture of ground carrots, ground hazelnuts, and ground toast, this cake has a dense texture typical of the pound cake with hints of lemon running throughout. A great classic cake, you can dress it up with an icing or garnish it with citrus peel curls or have some fun and add some raisins and chopped nuts to the batter.

Ingredients

  • 5 eggs (separated)
  • 150 grams sugar
  • 12 slices bread (toasted, ground)
  • 250 grams hazelnuts (ground)
  • 250 grams carrots (ground)
  • 1 package yeast
  • 1 lemon

Directions

  1. Preheat the oven to 175 degrees Celsius.
  2. Mix the egg yolks and sugar in a large bowl until it obtains a foamy texture.
  3. Add the toasted bread, hazelnuts, carrots, yeast, lemon juice, and lemon zest to the bowl, and mix.
  4. Beat the egg whites until it forms peaks and has a firm texture. Add to the bowl and mix.
  5. Place the dough in a pound cake mold lined with parchment paper and bake for 1 hour.
  6. Remove the pound cake from the oven, let it cool off, and serve.

We serve this cake with a variety of garnishes. Sometimes we frost it with an orange glaze or brush with water and sugar and curls of shaved carrots. We also add minced dates or raisins to the batter. When doing so we sometimes add more moisture by way of butter or oil. This is a good cake to wrap and give away for a fresh gift from the kitchen!
