Description

Trick the kids into eating their veggies with these savory carrot muffins, which are made with flour, ground almonds and grated carrots. While there's not much to the recipe, you do need to let the carrots drain to remove excess moisture before incorporating them into the batter. Once they've baked and have time to cool, dust them with powdered sugar, if desired. They'll keep in an airtight container on the counter for a few days.

Ingredients

200 grams carrots
200 grams sugar
2 eggs
100 grams vegetable oil
100 grams milk
300 grams flour
2 teaspoons baking powder
50 grams ground almonds
salt

Directions

1Preheat the oven to 170C.
2Sift the flour with the baking powder and a pinch of salt.
3Grate the carrots and let them drain.
4Beat the eggs with the sugar until foamy.
5Add the carrots, oil, milk, and flour by using the folding technique.
6Fill the cupcake liners with the batter. (It is also possible to use a loaf pan.)
7Bake for approximately 30 minutes, until lightly golden.
8Once cooled, sprinkle with powdered sugar.
