Description

Trick the kids into eating their veggies with these savory carrot muffins, which are made with flour, ground almonds and grated carrots. While there's not much to the recipe, you do need to let the carrots drain to remove excess moisture before incorporating them into the batter. Once they've baked and have time to cool, dust them with powdered sugar, if desired. They'll keep in an airtight container on the counter for a few days.

Ingredients

  • 200 grams carrots
  • 200 grams sugar
  • 2 eggs
  • 100 grams vegetable oil
  • 100 grams milk
  • 300 grams flour
  • 2 teaspoons baking powder
  • 50 grams ground almonds
  • salt

Directions

  1. Preheat the oven to 170C.
  2. Sift the flour with the baking powder and a pinch of salt.
  3. Grate the carrots and let them drain.
  4. Beat the eggs with the sugar until foamy.
  5. Add the carrots, oil, milk, and flour by using the folding technique.
  6. Fill the cupcake liners with the batter. (It is also possible to use a loaf pan.)
  7. Bake for approximately 30 minutes, until lightly golden.
  8. Once cooled, sprinkle with powdered sugar.
