This carrot cinnamon loaf is full of flavor and makes for a great snack. The carrots are accented with warming cinnamon in this delicious loaf, best enjoyed while it is still warm fresh out of the oven. If you want something even more special, you can use the bread as the base for french toast. A drizzle of maple syrup and a pat of butter are the perfect topping, though a dallop of whipped cream wouldn't hurt either!

Ingredients

  • 3 eggs
  • 250 grams sugar
  • 125 milliliters vegetable oil
  • 6 ounces plain yogurt
  • 325 grams flour
  • 7 grams active dry yeast
  • 1 teaspoon ground cinnamon
  • salt
  • 150 grams carrot

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. In a bowl, add the eggs, sugar, and oil, Mix well. Add the yogurt and mix again.
  3. Add the flour, yeast, ground cinnamon, and a pinch of salt to another bowl and mix well. Add to the wet ingredients and beat thoroughly. Add the grated carrot and fold.
  4. Let the batter rest for 5 minutes. Lightly oil and flour a 26 centimeter by 7 centimeter by 9 centimeter loaf pan.
  5. Pour the mixture into the loaf pan and bake for 45 minutes. Check doneness by piercing the center with a toothpick; if it comes out clean, it is done.

This recipe provided a nice change from the normal loaves of banana and pumpkin bread that I make. I made the recipe as shown and served it warm smeared with butter. Delicious!
