- nonstick cooking spray
- 1/2 cup canola oil
- 1/2 cup light brown sugar (packed)
- 1/3 cup granulated sugar
- 2 large eggs
- 1/3 cup unsweetened apple sauce
- 1 tsp. vanilla extract
- 1 1/2 cups all purpose flour
- 1 1/2 tsp. pumpkin pie spice
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt (scant)
- 1 1/3 cups finely grated carrots
- 1/4 cup raisins
- 1/4 cup finely chopped walnuts

Directions
- Preheat the oven to 350°F.
- Spray a 9x5-inch loaf pan with nonstick cooking spray. Set aside.
- Place the canola oil, brown sugar, granulated sugar, eggs, applesauce and vanilla extract in a large mixing bowl. Whisk vigorously until smooth and combined.
