Description

Sneak a serving of vegetables into tonight's dessert with this sweet and scrumptious recipe for Carrot Pound Cake. Made with a unique mixture of ground carrots, ground hazelnuts, and ground toast, this cake has a dense texture typical of the pound cake with hints of lemon running throughout. A great classic cake, you can dress it up with an icing or garnish it with citrus peel curls or have some fun and add some raisins and chopped nuts to the batter.

Ingredients

  • 5 egg yolks
  • 150 grams sugar
  • 12 toast (slices, crushed)
  • 250 grams hazelnuts
  • 250 grams carrots (grated)
  • 2 1/4 teaspoons dry yeast
  • 1 lime (or 1/2 orange)
  • 5 egg whites

Directions

  1. Preheat the oven to 175 degrees Celsius.
  2. In a bowl, beat the egg yolks and sugar until frothy.
  3. Add the crushed toast, hazelnuts, carrots, yeast, lime juice, and lime zest.
  4. In a separate bowl, beat the egg whites to form soft peaks. Fold into the other mixture.
  5. Pour into a baking mold and bake for 1 hour.
  6. Let it cool and serve.
