    Turned out great. Did half of the the sugar and only a half a cup of oil and the other half was unsweetened apple sauce

    So good! Best carrot cake recipe I've ever had. In 2 9-inch round cake pans, I only needed to bake for 35 minutes. I also needed to make 1.5x more icing to cover the whole cake.

    Not too moist, why? It’s cooked from out side and not really cooked inside

    I loved it. Tip let it cool down before (obviously) icing. Icing maybe not be thickened to it’s liking but once iced and refrigerated it’s nice and settled 🤤

    The cake itself is great. Nice and moist, and quick to whip together. I'm going to need to try a different icing next time, though. The icing sugar came in too strong for my family's tastes.

    It turned out well. Tastes really good. Like the recipe says, the longest part is grating the carrots unless you can find preshredded carrots.
