There's no reason to ever buy these popular pinwheels (available in every grocery store) when they are so easy to make yourself--and with the best-quality ingredients available. These are inspired by carpaccio, with raw beef and parmesan wrapped up in a flour tortilla--the ultimate in ease. Just be sure to buy the meat from a trusted butcher, since it wont be cooked. Once rolled and cut, arrange the slices in a circle on a platter (with torn or chopped salad greens in the center) and drizzle with balsamic cream (or reduced balsamic) and serve.
- beef (carpaccio)
- parmesan cheese (grated)
- flour tortillas
- ground black pepper
- olive oil
- cream (balsamic)
- Place a layer of carpaccio and cheese on top of a tortilla. Season with a pinch of salt and black pepper.
- Roll the tortilla and slice. Drizzle olive oil and the Balsamic cream on top and serve.
