Carpaccio and Parmesan Cheese Rolls with Balsamic Vinegar


There's no reason to ever buy these popular pinwheels (available in every grocery store) when they are so easy to make yourself--and with the best-quality ingredients available. These are inspired by carpaccio, with raw beef and parmesan wrapped up in a flour tortilla--the ultimate in ease. Just be sure to buy the meat from a trusted butcher, since it wont be cooked. Once rolled and cut, arrange the slices in a circle on a platter (with torn or chopped salad greens in the center) and drizzle with balsamic cream (or reduced balsamic) and serve.


beef (carpaccio)
parmesan cheese (grated)
flour tortillas
ground black pepper
olive oil
cream (balsamic)


1Place a layer of carpaccio and cheese on top of a tortilla. Season with a pinch of salt and black pepper.
2Roll the tortilla and slice. Drizzle olive oil and the Balsamic cream on top and serve.
