  • 18 ounces calamari (fresh, rings)
  • 1 ounce cod (unsalted fresh burbot, or regular, or mackerel)
  • 24 ounces rice (Valence, or a high quality long grain)
  • 1 cup coconut milk
  • 1 handful green olives (rinsed and wiped)
  • 3 tablespoons tomatoes (purée)
  • 1 bouquet (guarni_ 3 fresh sprigs each of: parsley, thyme and basil)
  • 2 cups dry white wine (for marinating)
  • 1/3 cup dry white wine (for cooking)
  • 1 teaspoon tumeric (shallow)
  • 1 teaspoon paprika
  • 1 teaspoon saffron (flowers)
  • 1 cup extra-virgin olive oil
  • 1 juice
  • 1 lemon
  • water (as needed)
  • kosher salt (to taste)
  • black ground pepper (freshly ground to taste)
  • chile chipotl ground pepper (to taste)
  • 3 tablespoons fresh parsley (finely chopped)
