If you are looking for a healthy alternative to cocoa powder and what something rich and decadent, then try this Carob and Coffee Cake. This cake uses carob powder, which is a healthy and flavorful substitute for cocoa powder. Walnuts and coffee liqueur are added to this moist and boisterous cake for a flavor that is out of this world. Coffee cake does not have to be a boring adult snack, it can be a dreamy dessert!

Ingredients

  • 5 eggs
  • 150 grams butter
  • 200 grams sugar (yellow)
  • 200 grams flour
  • 100 grams carob flour
  • 1 orange juice
  • 330 milliliters coffee liqueur
  • walnuts (to taste, crushed)

Directions

  1. Preheat oven to 160 degrees Celsius.
  2. Beat the egg whites until stiff.
  3. Beat the butter with the sugar. Add egg yolks, and beat again.
  4. Mix in the flours, little by little.
  5. Gradually, mix in the juice.
  6. Add the coffee liqueur and chopped walnuts, and mix.
  7. Add the stiff eggs whites, and mix gently.
  8. Pour into greased and floured cake pan.
  9. Bake for 40 minutes.

I absolutely love this coffee cake! The coffee liquor really adds a lot of coffee flavor. This cake is perfect for a little extra pick me up in the morning.
