  • 1 tablespoon canola oil
  • 1/2 teaspoon pepper
  • 1 1/2 teaspoons salt
  • 1 tablespoon smoked paprika
  • 1/2 tablespoon cumin
  • 1 1/2 teaspoons onion powder
  • 2 teaspoons chili powder (chipotle)
  • 1 teaspoon oregano
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon garlic powder
  • 12 ounces coke (or beer, coke is traditional)
  • 1/2 cup orange juice
  • 2 limes (juiced)
  • 2 cups carnitas
  • 28 ounces fire roasted tomatoes (lightly drained)
  • 3 chipotle chilies (in adobo, finely chopped, I used 3)
  • 2 tablespoons olive oil
  • 1 onion (small, diced, optional, i left mine out)
  • 2 cloves garlic (minced or grated)
  • 1 1/2 cups low sodium chicken broth
  • 16 ounces tortilla chips (bag of)
  • 1 cup grated Monterey Jack (pepper jack or cheddar cheese or a combo of all three)
