- Preheat oven to 275°F. Spray a Dutch oven with nonstick cooking spray.
- Place pork and bacon in the Dutch oven. Season with brown sugar, salt, black pepper, cumin, coriander, and oregano. Stir to coat. Squeeze juice from orange and lime over pork, and arrange the citrus segments around the meat. Scatter garlic, onion, jalapeño, and cilantro over pork. (Pro Tip: Avoid handling jalapeño peppers with your bare hands! Use disposable gloves, or cover your hands with plastic bags to limit contact with the capsaicin in the peppers, which will cause a burning sensation on the skin.)
- Place lid on Dutch oven and bake pork for 4-5 hours on the middle rack of preheated oven, until it is fall-apart tender.

Flavor was great. Also doubled citrus and garlic as other reviewers did. I think next time I'll just double the garlic and keep the citrus as is.

My husband doubled the orange, lime, garlic and onion and cooked it in the oven for an extra 30 min. It turned out delicious!!
