Ingredients

2 tomatoes
1/2 kilogram tomatillos
chili (arbol, to taste)
2 tablespoons vegetable oil
meat
1 kilogram pork ribs
salt
1 clove garlic

Directions

1Roast the tomatoes, tomatillos, and arbol chili.
2In the pressure cooker, heat the oil. Sear the meat and season with salt.
3In the blender, crush the tomatoes, tomatillos, chili, and garlic. Do not puree, as the texture should be chunky.
4Pour the sauce into the pressure cooker. Season with salt if needed. Close the lid and cook for 30 to 40 minutes from the time it boils.
5Serve immediately.
