Cooked in a pressure cooker, this hearty stew is made with pork ribs and a rich tomato and tomatillo sauce flavored with chili and garlic. Adjust the seasonings to fit your personal preference. Ingredients

  • 2 tomatoes
  • 0.5 kilograms tomatillos
  • chili (arbol, to taste)
  • 2 tablespoons vegetable oil
  • meat
  • 1 kilogram pork ribs
  • salt
  • 1 clove garlic

Directions

  1. Roast the tomatoes, tomatillos, and arbol chili.
  2. In the pressure cooker, heat the oil. Sear the meat and season with salt.
  3. In the blender, crush the tomatoes, tomatillos, chili, and garlic. Do not puree, as the texture should be chunky.
  4. Pour the sauce into the pressure cooker. Season with salt if needed. Close the lid and cook for 30 to 40 minutes from the time it boils.
  5. Serve immediately.
