Description

Island spices season this simple pork roast. Bake some sweet potatoes alongside this roast and accompany with buttered broccoli spears and deli cole slaw with some diced pineapple stirred in.

Ingredients

3 pounds pork loin roast
2 teaspoons olive oil
1 tablespoon black pepper
1 teaspoon nutmeg
1 teaspoon cinnamon

Directions

1Blend oil, pepper, nutmeg and cinnamon in small bowl. Brush mixture evenly onto roast. Place pork in shallow pan; roast in 350 degrees F. oven for 1 hour (20 minutes per pound) or until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes. before slicing.
