  • 3/4 pound cooked pork roast (cut into 1/2-inch cubes)
  • 6 cups mixed salad greens
  • 15 ounces black beans (rinsed and drained)
  • 1/4 red onion (halved and thinly sliced)
  • 2 mango (large ripe, peeled and cubed)
  • 1/2 cup vinaigrette dressing (fruit-flavored)


  1. In large bowl, gently toss all ingredients with dressing. Serve on shallow salad bowls or dinner plates.
