  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cardamom
  • 1 tablespoon orange rind (chopped)
  • 1 tablespoon grated lemon rind
  • 3 eggs
  • 1/4 cup canola oil
  • 1 1/2 cups yogurt
  • 1/4 cup honey
  • 1 cup prunes (chopped)
  • 1 cup chopped walnuts

Directions

  1. In a large bowl, sift the flour with the baking soda and cardamom. In a medium bowl, beat eggs, oil, yogurt and honey. Stir the liquid ingredients into the flour mixture until batter is smooth.
  2. Fold in the dried fruit and nuts. Pour batter into greased bundt pan. Bake at 350 degrees for 1 hour or until cake tester come out dry.
