This caramelized salmon is made with honey and mustard for a flavor-packed dish. You need just 8 ingredients to make this delicious recipe and it only takes about 35 minutes from start to finish. The best thing about this recipe, aside from the delicious taste, is that it only has 50 calories per serving. This makes it a great choice for a healthy dinner. A bit of zucchini on the side helps to make this dish filling, if you want to make it a complete meal serve it with some brown rice as well.

Ingredients

  • 4 salmon (Lusomar, medallions)
  • salt
  • ground black pepper
  • 3 tablespoons balsamic vinegar
  • 4 teaspoons dijon mustard (with or without seeds)
  • 1 tablespoon water
  • 1 tablespoon honey
  • 2 zucchini (cut in thin strips)

Directions

  1. Season the medallions with salt and pepper, set aside.
  2. Preheat oven to 200 degrees Celsius.
  3. In an oven-proof frying pan, put the vinegar, mustard, water, honey, salt, and pepper.
  4. Bring to boil.
  5. Add the medallions, and cook the fish for 3 to 5 minutes, or until the sauce begins to thicken.
  6. Place pan in oven, and bake for about 8 minutes, or until fish is browned.
  7. Remove the fish from the oven, add a few strips of zucchini to the pan, covering with the warm sauce.
