I am actually intolerant to sweet potatoes so I’m SO glad I found this recipes because there’s a similar consistency to roasted sweet potatoes I used to love. I used a tad too much oil—be careful! Still SOOO good!!!

I think that it turned out pretty good but I think that it needed more time for it to get tendered because some of the pieces were still too chewy.
