Muffin and cupcake fusion with only 15 calories! Delight in the sweetness of a thick, feathery cupcake deprived of worry. This simple recipe creates soft cupcakes that aren’t too sweet, but are able to melt away with each bite. French caramels are exceptional candies. They melt easier and shine as they mix with sugar. If at all possible, purchase these before resorting to your every-day caramel rolls, but those will work if that is what’s available.

Ingredients

  • 1 teaspoon baking powder
  • 20 caramel (carambars, imported from France or caramel Candy rolls)
  • milk (10 cl.)
  • 150 grams butter
  • 160 grams powdered sugar
  • 150 grams flour
  • 3 eggs

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. In a saucepan, melt the carambars, milk, and butter over medium heat, stirring constantly until the carambars melt.
  3. In a bowl, mix the sugar, flour, baking powder, and eggs.
  4. Add the carambars mixture. Pour into muffin pan and bake 30 minutes for cupcakes, or 40 minutes for 1 large cake (baked in a cake pan).
  5. Let cool before serving.
