Ingredients

  • 300 grams farfalle
  • 3 tablespoons sunflower oil
  • 2 teaspoons sambal oelek
  • 3 cloves garlic (finely chopped)
  • 6 tablespoons balsamic vinegar
  • 1 onion (finely diced)
  • 2 teaspoons salt
  • 1 teaspoon caster sugar
  • 6 tablespoons olive oil
  • 2 mozzerella (packs, pearls)
  • 400 grams cherry tomatoes (halved)
  • 20 grams basil (chopped)
  • 1 lime (cut into wedges)

Directions

  1. Cook the pasta in a saucepan of boiling, salted water according to the package instructions. Drain then rinse under cold water.
  2. To marinate the shrimp, mix the sunflower oil, sambal oelek and garlic together. Mix in the shrimp, cover and chill.
  3. To assemble the salad, mix the vinegar, onion, 1 tsp salt, pepper and sugar together. Whisk in the olive oil. Toss with the mozzarella, tomato, basil and pasta.
  4. To cook the shrimp, preheat the broiler, spread the shrimp on a baking sheet and broil for 6-10 mins or until cooked, turning halfway through. Serve with the salad and limes wedges.
