Toothpicks spears with cherry tomatoes, mozzarella and olives are dressed with olive oil and seasoned with salt. Served on a bed of lettuce, they're garnished with basil, toasted almonds and pine nuts. Although the recipe doesn't require it, a hit of acid would also be nice. Try adding a whirl of balsamic vinegar or a squirt of lemon juice, plus some freshly cracked black pepper, to round out the flavors further.

  • salad greens
  • cherry tomatoes
  • salt
  • extra-virgin olive oil
  • mozzarella cheese (mini balls)
  • green olives
  • basil
  • almonds (slices)
  • pinenuts

Directions

  1. Use single portion appetizer bowls and place some very finely chopped salad greens inside each one.
  2. Cut the cherry tomatoes in half, season them with some salt, and drizzle with some extra virgin olive oil.
  3. Place a tomato half, a mini mozzarella ball, and an olive on a toothpick.
  4. Place the toothpick in the bowl on top of the salad greens and garnish with some basil, toasted almond slices, and pine nuts.

I liked this recipe, but I would make a few changes. The green olives are a little too tart, so it would be better to switch them with black ones. Also, though the almonds add crunch to the dish, they absorb some of the olive oil making them get softer if they sit long. For that reason is best to add the almonds right before serving, or possibly toast them in the oven for a few minutes.
