Description

Featuring two great tastes that taste great together — garlic and salty Pecorino cheese — this chewy foccacia comes together with little effort. After it's needed and allowed to rise, it's rolled out and pressed to fit a parchment-lined baking sheet before it's transferred to the oven and baked until golden. Serve it warm as is or with a side of marinara or garlic oil for dipping.

Ingredients

salad greens
cherry tomatoes
salt
extra-virgin olive oil
mozzarella cheese (mini balls)
green olives
basil
almonds (slices)
pinenuts

Directions

1Use single portion appetizer bowls and place some very finely chopped salad greens inside each one.
2Cut the cherry tomatoes in half, season them with some salt, and drizzle with some extra virgin olive oil.
3Place a tomato half, a mini mozzarella ball, and an olive on a toothpick.
4Place the toothpick in the bowl on top of the salad greens and garnish with some basil, toasted almond slices, and pine nuts.
