- 8 ounces mozzarella cheese (grated or crumbled)
- 2 tomatoes (medium sized, any kind, chopped)
- 1 handful basil (chopped)
- 15 empanada (discs, can use store-bought or make your own empanada dough for baking or for frying)
- 1 egg (whisked - to be used as egg wash)
- garlic sauce (Basil)

I made these with the balsamic chimichurri sauce for a get together with friends and they were a huge hit!
