Description

In this whimsical, springtime spin on cappuccino, a chilled pureed pea soup is topped with mint-infused whipped cream (unsweetened) that’s sprinkled with dried chile powder—Espelette is called for here, but other chiles work just as well. If you don’t have a siphon, you can whip the cream with a mixer. Serve as an hors d’oeuvre with cocktails, or as a starter course at a dinner party where roast lamb is on the menu.

Ingredients

500 grams fresh peas
1/2 chicken bouillon (lean, tablet)
2 tablespoons cream (for the soup)
mint leaves
cream (40 cl., for whipping siphon)
chili peppers (Espelette)

Directions

1Shell the peas, put them in a saucepan with the stock cube and 1/2 liter of water. Season with salt.
2Cook for about 15 minutes. Put in the blender jar with 2 tablespoons of cream. Mix for 4 to 5 minutes, and then strain the soup through a sieve.
3Store in the refrigerator in a bottle.
4Gently heat 40 centiliters of cream (do not boil), and infuse with 15 mint leaves.
5Let cool, add salt, mix and sieve. Put the cream in a whipping siphon, refrigerate.
6Pour the soup into a glass, add a little mint flavoured whipped cream, and sprinkle with some Espelette chili pepper.
