Skip the butter in this delectable cake. With hints of lemon and vanilla, it's all yogurt and oil with this one. Easy to make and ready in an hour. For an added twist of flavor, try substituting coconut oil.

Ingredients

  • 240 grams sugar
  • 5 eggs
  • 1 lemon zest
  • 1 deciliter oil
  • 1 vanilla yogurt
  • 180 grams flour
  • 150 grams corn starch
  • 1 tablespoon baking powder
  • margarine (for greasing)
  • flour (for dusting)
  • sugar (for sprinkling)
  • cinnamon (for sprinkling)

Directions

  1. Grease a rectangular baking pan with butter and sprinkle with flour.
  2. Preheat the oven to 180 degrees Celsius.
  3. In a bowl, mix sugar, eggs, lemon zest, oil, and yogurt. Beat well until it becomes a smooth mixture.
  4. Add the flour, cornstarch, and baking powder. Beat well again.
  5. Place the dough in the pan, and thoroughly coat with sugar and cinnamon.
  6. Bake for about 45 minutes.
  7. Check the cooking with a toothpick, remove from the oven, unmold, and let cool.

Most cake recipes call for plain yogurt, just to get a nice consistency with the batter, but using vanilla yogurt here is perfect. It gives you that hint of vanilla taste throughout the cake. It sweetens up the sour lemon flavor to give you a great tasting cake. The cinnamon dusting gives it a bit of a coffee cake taste. I can serve this as a desert or have it for breakfast.
