Description

Skip the butter in this delectable cake. With hints of lemon and vanilla, it's all yogurt and oil with this one. Easy to make and ready in an hour. For an added twist of flavor, try substituting coconut oil.

Ingredients

240 grams sugar
5 eggs
1 lemon zest
1 deciliter oil
1 vanilla yogurt
180 grams flour
150 grams corn starch
1 tablespoon baking powder
margarine (for greasing)
flour (for dusting)
sugar (for sprinkling)
cinnamon (for sprinkling)

Directions

1Grease a rectangular baking pan with butter and sprinkle with flour.
2Preheat the oven to 180 degrees Celsius.
3In a bowl, mix sugar, eggs, lemon zest, oil, and yogurt. Beat well until it becomes a smooth mixture.
4Add the flour, cornstarch, and baking powder. Beat well again.
5Place the dough in the pan, and thoroughly coat with sugar and cinnamon.
6Bake for about 45 minutes.
7Check the cooking with a toothpick, remove from the oven, unmold, and let cool.
