Description

This crust-less pie delivers a pleasant surprise. Loaded with cantaloupe, you can serve it as an appetizer, as a side dish, or even as a dessert. The cantaloupe is complemented with just a hint of mozzarella cheese and basil to give it a European flair. This easy recipe is ready in just 20 minutes.

Ingredients

  • 1 cantaloupe (large)
  • 2 mozzarella cheese (balls)
  • 15 basil leaves
  • 1 tablespoon olive oil
  • sea salt

Directions

  1. Peel the cantaloupe and remove seeds.
  2. Cut in slices and then in small cubes.
  3. Cut the mozzarella in slices, and then in cubes.
  4. In a bowl, mix chopped basil, olive oil, and salt.
  5. Mix in cantaloupe and mozzarella, by gently lifting.
  6. Store tartare in a cool place or serve immediately.
  7. Serve in glasses, or use a circle or rectangle form.
  8. Place form on a plate, fill with tartare, even out with the back of a spoon.
  9. Serve with toasted bread; or an arugula or prosciutto salad.
