Here fresh cantaloupe is diced and tossed with lemon juice, sliced red onion, and chopped cilantro for a summery salad that tastes great on its own or when used as a topping (similar to salsa) for grilled fish or chicken. You can also fold it into mixed green salads.


  • 1/2 cantaloupe (Gaul)
  • 1/2 melon
  • 1/2 lemon (juice)
  • 1 red onion (slices)
  • coriander (chopped)


  1. Cut the melons into slices and then dice.
  2. Add to a bowl and season with the lemon juice.
  3. Add the red onion slices and sprinkle with chopped cilantro.
  4. Use as a garnish or as a salad.
