Description

Now here’s a twist on a classic favorite! Mediterranean cookies that are chock full of candied tomatoes, black olives, and pine nuts! The unique combination of all ingredients all but eliminates the strong flavors of the tomatoes and olives. Serve immediately following lamb dishes, such as kabobs. Decorate with drops of white icing or dust with powdered sugar. Ready in just under an hour, this recipe is simple and requires nothing more than a standard electric mixer and baking sheet.

Ingredients

  • 60 grams black olives
  • 60 grams tomatoes (candied)
  • 200 grams flour
  • 1 teaspoon baking powder
  • 80 grams butter
  • 2 tablespoons mascarpone
  • salt
  • ground black pepper
  • 1 eggs
  • 60 grams pinenuts

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Cut the olives and the candied tomatoes into small cubes.
  3. In mixer bowl, combine the flour, baking powder, butter, mascarpone, salt, and pepper.
  4. Add the egg, tomatoes, olives, and pine nuts.
  5. Gently mix, and take small bits of dough (about 10 grams each), shape them into balls, and flatten slightly with the back of a spoon on a baking sheet.
  6. Bake for 15 minutes.
