A great side dish, this recipe for Cambray Potatoes with Cilantro is full of savory flavors. Cooked in a lime, garlic, Serrano chili and coriander sauce, these potatoes are soft and bursting with flavor. This recipe does not give a recommended amount for Serrano chilies but rather leaves it up to you to decide how spicy you want your potatoes to be. Serve as a side to grilled meat or a hearty stew. In order to make this dish vegetarian and vegan friendly, substitute vegetable stock cubes for the chicken stock cubes.
Ingredients
- 1 kilogram potatoes (cambray)
- 4 cups coriander
- 1/4 cup olive oil
- 1 chicken stock cubes
- 2 lime
- 1 clove garlic
- serrano chilies (to taste)
- water
Directions
- 1In a saucepan, add the potatoes.
- 2In a blender, add the coriander, olive oil, chicken bouillon, lime juice, garlic, and Serrano chili. Puree until a sauce forms.
- 3Pour the sauce over the potatoes and add enough water to cook the potatoes. Season as needed.
- 4Cook the potatoes.
- 5Garnish to taste and serve warm.
