Description

A great side dish, this recipe for Cambray Potatoes with Cilantro is full of savory flavors. Cooked in a lime, garlic, Serrano chili and coriander sauce, these potatoes are soft and bursting with flavor. This recipe does not give a recommended amount for Serrano chilies but rather leaves it up to you to decide how spicy you want your potatoes to be. Serve as a side to grilled meat or a hearty stew. In order to make this dish vegetarian and vegan friendly, substitute vegetable stock cubes for the chicken stock cubes.

Ingredients

  • 1 kilogram potatoes (cambray)
  • 4 cups coriander
  • 1/4 cup olive oil
  • 1 chicken stock cubes
  • 2 lime
  • 1 clove garlic
  • serrano chilies (to taste)
  • water

Directions

  1. 1In a saucepan, add the potatoes.
  2. 2In a blender, add the coriander, olive oil, chicken bouillon, lime juice, garlic, and Serrano chili. Puree until a sauce forms.
  3. 3Pour the sauce over the potatoes and add enough water to cook the potatoes. Season as needed.
  4. 4Cook the potatoes.
  5. 5Garnish to taste and serve warm.
