Easy and fun to make. We like the suggestion to serve with tortillas rather than baking, but My daughter wanted “real enchiladas” so I rolled them and baked and topped with a bit of the extra sauce and some Mexican and mozzarella cheese. Just soften the corn tortillas first in the microwave in damp towels wrapped in plastic wrap so they don’t tear.
