This cake is fluffy to the max. Made with orange zest, this cake is bursting with citrus flavor. Drizzled with a honey syrup, the cake has a lovely moist texture and a lovely crunch on the outside.

Ingredients

  • 200 grams margarine (softened)
  • 2 cups sugar
  • 3 cups flour
  • 3 whole eggs
  • 2 natural yogurts
  • 1 orange zest
  • 1 tablespoon baking powder
  • 3 tablespoons honey
  • 1 orange juice (large)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Grease a round cake pan with margarine and flour. Set aside.
  3. Beat the butter with the sugar until creamy. Add the eggs, yogurt, and an orange zest and beat well. Finally, add the flour and baking powder, and mix well, without beating.
  4. Place the dough in the cake pan and bake about 50 minutes.
  5. Remove from oven, let cool, and unmold.
  6. With the cake just taken out of the oven, add the orange juice and honey to a saucepan.
  7. Once it is hot, remove from heat, and generously brush the entire surface of the cake until using up all the syrup.
  8. Allow to cool and serve.

This cake really is bursting with flavor and sweetness. First off, the cake itself comes out very fluffy. Adding the honey and orange juice to top it off really gives it that moistness you want with the flavor that just soaks throughout the cake. I used orange juice with the pulp because I love the added texture it gives to the outside of the cake, but any works to ramp up the flavor.
