Bring on the grilling season! These spicy thick chops are a great way to get family to the dinner table. Also good on camping trips. Serve with Roasted Potato Dippers and grilled summer squash.

Ingredients

  • 6 bone-in ribeye (rib) pork chops (1 1/2-inch thick)
  • 1 tablespoon paprika
  • 2 1/2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne
  • 3/4 teaspoon white pepper
  • 3/4 teaspoon black pepper
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon oregano

Directions

  1. Mix all ingredients except pork and store in an airtight container. Rub chops with rub. Prepare medium-hot fire and grill chops over indirect heat for 6-8 minutes on each side, until internal temperature on a thermometer reads 145 degrees Fahrenheit, followed by a 3-minute rest time.
