Turned out amazing! I didn’t have any celery so I put 2 pinches of celery salt in the pan with the oil. Also added kielbasa and used four different peppers: green, red, yellow, and a little minced jalapeño for heat. My kids and I love spicy food, so this was a hit! This was so easy and delicious, will definitely make again! Next time might try adding shrimp as well.

I like hot dishes but my husband doesn't so I cut the cayenne in half. Even so, it was HOT, HOT, HOT. My rice wasn't done in 20 minutes so I dumped another cup of hot water in the pot & cooked it 10 more minutes. You could easily double the amount of chicken breast. Don't be afraid of the brown bits that stick to the bottom of the pot; scrape them off - they add flavor to the dish. Despite the heat, I liked the recipe. This dish has authentic Cajun flavor. Judy, Paul Prudhomme would be proud!
