Cajun Barbecue Deep-fried Turkey



  • 12 pounds turkey (completely thawed)
  • Crisco Original No-Stick Cooking Spray
  • 2 tablespoons cajun seasoning
  • 1/2 cup chicken broth
  • 1/2 cup butter
  • 1/4 cup cajun seasoning
  • 1 dash hot pepper sauce
  • 2 teaspoons salt
  • 1/4 teaspoon cayenne pepper
  • Crisco® Frying Oil Blend

    1. PAT turkey dry with paper towels; coat completely with no-stick cooking spray. Rub Cajun seasoning over entire surface of turkey.
    2. COMBINE Spice Injection Mixture ingredients in a small saucepan. Cook and stir over medium heat until butter is melted. Let cool to barely warm. Inject the mixture with spice injector into several spots on both sides of the turkey breast and thighs, making sure not to inject too much into any one spot. Cocer and refrigerate overnight.
    3. FRY according to fryer manufacturer's directions using oil blend. Reference package for additional information. Brush fried turkey with prepared barbecue sauce.
