Description

Caesar salad makes for a delicious and light meal, but it isn't exactly portable. This recipe solves that problem by rolling all of the salad ingredients up in a tortilla for an easy to enjoy meal. You can easily pack this in a lunchbox for lunch at school or the office, or pack them in your cooler for a roadtrip for a healthy and quick meal on the go.

Ingredients

5 tablespoons olive oil
1 eggs
4 anchovy fillets
2 tablespoons worcestershire sauce
1 tablespoon mustard seeds
1 garlic cloves
salt
ground black pepper
red wine vinegar
120 grams parmesan cheese
4 chicken fillets
1 eggs
bread crumbs
vegetable oil
2 corn tortillas
lettuce
parmesan cheese

Directions

1In a bowl, blend the oil, egg, anchovies, Worcestershire sauce, mustard seeds, garlic, and a pinch of salt and black pepper and a few drops of red wine vinegar. Add the cheese and mix well.
2Place the dressing in the refrigerator.
3Season the chicken with salt and ground black pepper and coat it with egg and breadcrumbs.
4Deep fry the chicken in vegetable oil.
5Heat the tortillas and place a base of lettuce on top of each. Season with salt and pepper.
6Add the breaded chicken, Parmesan cheese slices, and Caesar dressing on top of the lettuce.
