  • 5 tablespoons unsalted butter (room temperature)
  • 1/2 cup cane sugar (natural)
  • 2 eggs (room temperature)
  • 1/2 cup buttermilk (or applesauce)
  • 2 tablespoons lemon zest
  • 2 tablespoons orange zest
  • 1 cup polenta (fine ground)
  • 1 1/2 cups almond meal
  • 1 pinch salt
  • 1 1/2 teaspoons baking powder
  • 1 tablespoon butter
  • 2 pounds plums (assorted stonefruits, pluots, peaches, nectarines etc.)
  • 1 tablespoon orange juice
  • 1 dash vanilla extract (or one vanilla bean)
  • yogurt (honey sweetened, or whipping cream for serving)
