Description

- 1 onion (chopped)
- 1 tablespoon olive oil
- 400 grams chickpeas (canned)
- 1/2 butternut squash (peeled and cubed)
- 3 carrots (peeled and cubed)
- 1 liter chicken stock
- 1 sprig rosemary
- 80 grams chorizo (small cubes)
- 100 grams chestnuts (vacuum-packed cooked, cooked)
Directions
- In a large saucepan, heat olive oil, fry the onion.
- Add carrots, butternut squash, and rosemary. Stir. Add chickpeas, broth, salt, and pepper. Cook covered for 25 minutes until squash is tender. Mix, and gradually add broth to obtain desired texture. Adjust the seasoning.
- In a pan, fry chorizo, add chestnuts, cook for 4 to 5 minutes.
- Pour the soup in plate, add diced chorizo, chestnuts, and a little fresh thyme.

This is definitely a comfort soup and I will be making it again. The squash with the chorizo and chickpeas was a palatable experience I won't forget. My husband loved this one.
