  • 1 butternut squash (approximately 2 lbs, peeled, seeded and chopped into bite-size pieces, see instructions or an easy way to prep the squash)
  • 1 tablespoon extra-virgin olive oil
  • 1 yellow onion (large, chopped)
  • 1 bell pepper (large, your choice of red, yellow, orange or green, chopped)
  • 4 cloves garlic (minced or pressed)
  • 1 1/2 pounds lean ground beef
  • 2 tablespoons tomato paste
  • 2 tablespoons hot sauce (your favorite variety - I used Cholula)
  • 3 cups beef broth (reduced-sodium, more or less depending on how thick you like your chili)
  • 15 ounces reduced sodium black beans (rinsed and drained)
  • 15 ounces roasted tomatoes

  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon chili powder (chipotle, more or less depending on taste)
  • 1 teaspoon ancho chili powder (more or less depending on taste)
  • 1 tablespoon fresh oregano (chopped)
  • 2 tablespoons cornmeal (more or less depending on how thick you like your chili)
