  • 1 pound butternut squash (peeled and diced)
  • 1 teaspoon olive oil
  • 1/4 cup shallots (minced)
  • 2 cloves garlic (minced)
  • 2 tablespoons grated parmesan cheese (fresh)
  • kosher salt
  • freshly ground black pepper
  • 9 lasagna noodles (cooked, use gluten free noodles for gluten free)
  • 10 ounces frozen chopped spinach (package, heated and squeezed well)
  • 15 ounces fat free ricotta cheese (I like Polly-o)
  • 1/2 cup grated parmesan cheese (fresh)
  • 1 large egg
  • salt
  • pepper
  • 9 tablespoons italian blend cheese (part skim shredded, I used Sargento)
  • 1 tablespoon parsley (minced)

We enjoyed this thoroughly. Not as labor-intensive as a lot a lasagnes. Could probably benefit from some additional herbs. Definitely would make again?

Made this, but in lasagna form, no roll. I used 16oz of frozen spinach instead of 10oz, and 16oz frozen butternut squash, not fresh. I would add more salt, and maybe some herbs next time: thyme, oregano, and cumin perhaps. It was delicious, 10for10 I'd make it again.

I make this all the time. I have adjusted the recipe over time, but it's the same basic idea. Love this.
