  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)
  • olive oil (A good drizzle of, or a neutral oil)
  • 1 tsp. dried Italian herbs
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. garlic powder
  • 14.5 oz. diced fire roasted tomatoes (can of, Regular is fine as well)
  • 4 cups low sodium vegetable broth
  • 3 cups water (start with 2 and add more, if needed)
  • 3/4 cup orecchiette pasta (or another hearty pasta of your choice)
  • 1/4 cup heavy cream (optional)
  • 1/2 cup milk (optional)
  • 4 cups kale (I used Lacinato Kale)
