  • 2 tablespoons olive oil
  • 1/2 cup sweet onion (chopped)
  • 3 cloves chopped garlic
  • 2 stalks celery (chopped)
  • 1 carrots (chopped)
  • apple (peeled and diced, use a apple for cooking or baking-)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • pepper (to taste)
  • 2 1/2 cups soup (enough to cover vegetables chicken or vegetable broth {I made my, thick as you can see but if you want it thinner add more stock until you reach the desired consistency when you are blending it})
