  • 2 tablespoons olive oil
  • 6 cups butternut squash (cubed)
  • 1 cup quinoa (uncooked, + 2 cups water, 3 cups cooked)
  • 2 cups corn
  • 15 ounces black beans (a little more than a cup, drained and rinsed)
  • 1 tablespoon cumin
  • 1 lime (juiced)
  • salt
  • pepper
  • 1 tomato (chopped)
  • 1 avocado (diced)
  • 2 cups cheddar cheese (non-dairy cheese if vegan)
  • salsa (or hot sauce, optional, for serving)

    This was so flavorful! I stuck to the ingredients for the most part but changes a few things for what I already had in my fridge and it was delicious. I would suggest adding hot sauce.

    This was good, almost very good. I added salsa and I think next time I will add some sour cream as well. Maybe some cilantro to top it off.

    I thought it was amazing, but my husband was not impressed, he is not a big fan of quinoa or squash. Kids thought it was okay.

    it was really good. wife put it in a tortilla and im thinking next time ime gonna add ground turkey!
