Great! Made w/ red lentils. Added some fresh basil, sage and rosemary. Kale is pretty hardy. It might be good with spinach or Swiss chard if not over cooked.

I didn't have quinoa to hand so used red lentils. The substitution worked really well. You might need to increase the stock slightly due to the lentils. Also I would add any fibrous bits of kale (I used the Italian cavolo nero) at least 15 to 20 mins before the end to give enough time to soften and then add the bulk of the leaves with 5 mins to go as it says in the recipe. Lovely result. Will make again.

I made this and I'll say it tasted okay. The kale had a nice flavor but the butternut squash was horrible and ruined the dish.

t was delicious. i added chickpeas for more protein but all other was the same ad the family livedit.great vegetarian dinner option that is delicious.

I'm sorry, but this was awful. I made a full pot and ate what I put in my bowl, but I threw the rest away. I would never make this again.
