I must have done something wrong because my soup was more brown than orange. It was ok but I’m not sure I’ll finish the leftovers.
Hey there! 13 Oct
Baked instead of boiled buttercup squash. Wasn’t very flavorful—will try again with more apple and cinnamon.

Tasty, but definitely needed more salt. I added ginger and cloves to mine.

I switched cinnamon for nutmeg and added a dash of cayenne. Yummmy!!!!

It was okay but not a lot of flavor depth. I think I would prefer it slightly more savory. And the kids didn’t love it either unfortunately.

Warm and delicious!!

Like someone else here mentioned, it did taste as though it was missing something. That isn’t to say that it isn’t delicious; just simple tasting. I added a little garlic salt as I used a low sodium broth AND I added about a 1/4 tsp of curry powder. These enhanced the flavor nicely!! I’d still make it again. :)

Great soup and oh so easy!

This recipe really WAS easy and delicious -- and the cleanup was almost nonexistent! The only thing I would change is I would decrease the onion.

Great soup!!! Simple quick and easy to throw together on cold day

I used 1/2 peeled butternut squash, 2 apples, 1/2 onion, and 2 cups of broth and I had more than enough (I am only one person). Overall, simple recipe but prep and cooking time was 2 hrs so not as quick as it sounds. (Probably my fault, I’m a slow chopper)

I have no doubt that this wouldve been delicious had we ground the ginger into finer pieces.

I stuck very closely to the recipe, but in the end I thought it was missing something.

This was magnificent! I’ve doubted the recipe due to its simplicity but it turned out delicious and balanced!

I personally thought that it wasn't good or bad. I thought it was too sweet for me. I prefer other butternut squash soup recipes.

I couldn’t find this recipe when it was time to make the soup, but my version turned out rather nicely. I’m looking forward to making this again with the actual recipe!

I made this as the starter for a pork loin dinner. It is very easy to make and turned out good. I added cinnamon sticks as garnish for a little extra color. I will make again.

We loved it. I did however add soaked and ground up almonds as per another reviwers recommendation..

I really did not like this recipe. It was too sweet. I will not make it again. It was not hearty and it did not even smell good.

My "Go To" Butternut Squash soup base. I add carrots to the recipe, but other than that - it is creamy & flavorful without the calories of adding cream.

Added soaked cashews to make it heartier, like a bisque. Also, used veggie broth to make it 100% vegetarian. Delicious!
