  • 14 whole cashews (about 2 tbsp)
  • 2 tablespoons butter (separated)
  • 1 tablespoon oil
  • 1/2 onion (medium, cut into four pieces)
  • 2 tablespoons ginger (roughly chopped)
  • 4 cloves garlic
  • 1 tablespoon green chili (chopped, I usually use either jalapeno or serrano)
  • 14 1/2 ounces whole peeled tomatoes
  • 1/2 teaspoon Garam Masala
  • 1 teaspoon ground cumin
  • 1 teaspoon red chili powder (Aleppo pepper, Kashmiri, or red paprika work too)
  • 1/4 teaspoon fenugreek seeds (ground, methi)
  • 1/2 teaspoon sugar
  • 3/4 teaspoon salt (or to taste)
  • 1 tablespoon fenugreek leaves (dried, kasoori methi)
  • 8 ounces paneer (chopped, either homemade or store bought will work just fine)
  • cilantro (for garnish, optional)
