These light buttery cupcakes are a sweet treat anytime of the day. Made with your favorite jam, these cupcakes are buttery and sweet. Can be frozen for enjoyment at a later date.

Ingredients

  • 200 grams butter (at room temperature)
  • 200 grams sugar
  • 4 eggs
  • 200 grams flour
  • 1 teaspoon baking powder
  • powdered sugar
  • plum jam (or jam of choice)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Prepare cupcake pans with paper liners.
  3. Begin by energetically churning the butter with the sugar. Then, add the eggs, and whisk again until the mixture is fluffy and whitish.
  4. Add flour and baking powder, and mix without whisking. Place the dough in the molds, filling 2/3 full. Sprinkle with powdered sugar, and bake for 15 to 20 minutes.
  5. Remove from the oven, and let cool slightly. With a sharp knife cut the top off the cupcakes, and spread 1 teaspoon of jam in each one. Replace the top, and serve.

Fantastic cupcake recipe. As soon as I came across this recipe I jotted it down. I have made these more times than I can count now and they always turn out wonderfully. I love that any jam will work with this recipe. I have done all sorts of jam. My favorite to do in these cupcakes is strawberry. Super delicious, moist, and the cupcake itself isn't too heavy. It’s not easy to make a cupcake with jam filling to turn out that way. Job very well done here.
