These are much more than your typical butter cookies. Yes, butter is the primary ingredient, but there's also almond flour in the dough, for a hint of nuttiness, plus a splash of cognac for extra flavor. What's more, after baking, the cookies are dipped halfway in melted dark chocolate and allowed to set before enjoying. The cookies can be stored between layers of waxed or parchment paper for a few days at room temperature.

Ingredients

  • 200 grams flour
  • 50 grams almond flour
  • 100 grams butter
  • 80 grams powdered sugar
  • 1 tablespoon cognac
  • 150 grams dark chocolate

Directions

  1. Add the flours, butter in pieces, sugar, and cognac. Mix until a dough forms.
  2. Shape the dough into a ball, cover it with plastic wrap and refrigerate it for 40 minutes.
  3. Preheat the oven to 160 degrees Celsius.
  4. Roll out the dough with a rolling pin to between 1 and 4 centimeters thick.
  5. Make some holes in the dough with a fork and cut the sheet into rectangles.
  6. Place the cookies on a parchment paper-lined baking sheet and bake for between 20 and 25 minutes. Remove from the oven and cool on a wire rack.
  7. Melt the dark chocolate in a microwave and dip the cookies halfway, then allow them to dry.
  8. Serve immediately or store in sealed container for a few days.

These cookies were simply amazing. I loved the sweetness and rich buttery taste. With the few ingredients and simple instructions they take just minutes to make. I'll be making this 4 star recipe again shortly.
