Ingredients

1 1/2 pounds boneless pork loin roast (cubed)
4 medium carrot (peeled and diced)
1 1/2 tablespoons vegetable oil
3/4 cup dry red wine
2 teaspoons fresh thyme
2 teaspoons fresh thyme
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
14 1/2 ounces diced tomatoes in juice
1 cup celery (diced)
1/3 cup raisins

Directions

1Brown pork in oil. Stir in wine and seasonings. Simmer covered for 45-60 minutes or until pork is tender. Stir in tomato, celery and raisins, simmer an additional 15 minutes.
