Ingredients

  • 1 1/2 pounds boneless pork loin roast (cubed)
  • 4 medium carrots (peeled and diced)
  • 1 1/2 tablespoons vegetable oil
  • 3/4 cup dry red wine
  • 2 teaspoons fresh thyme
  • 2 teaspoons fresh thyme
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 14 1/2 ounces diced tomatoes with juice
  • 1 cup celery (diced)
  • 1/3 cup raisins

Directions

  1. Brown pork in oil. Stir in wine and seasonings. Simmer covered for 45-60 minutes or until pork is tender. Stir in tomato, celery and raisins, simmer an additional 15 minutes.
