  • 2 buffalo mozzarella (medium balls)
  • 4 figs
  • 1 head Belgian endive (leaves separated)
  • 12 slices prosciutto
  • 2 cups arugula leaves
  • crusty bread
  • sherry vinegar
  • extra-virgin olive oil

Directions

  1. Cut each mozzarella ball into six slices. Slice figs lengthwise.
  2. To serve, place 3 endive leaves on each plate. Top with mozzarella, fig, prosciutto, arugula and more endive.
  3. Dress salad with extra-virgin olive oil and a splash of sherry vinegar. Serve with crusty bread and extra-virgin olive oil the side.
