Ingredients

2 boneless skinless chicken breasts (medium, sliced into strips)
1 tablespoon olive oil
1 teaspoon paprika
1 tablespoon cayenne
salt and ground black pepper
cooking spray
1 tablespoon margarine (light)
2 tablespoons salsa (prepared spicy)
4 tablespoons blue cheese (crumbled)
4 tablespoons light sour cream
1 scallions (stalk, minced)
salt and ground black pepper
2 sandwich rolls (or baguettes)
2 leaves lettuce

Directions

1Mix the chicken with the olive oil, paprika, cayenne, salt, and pepper.
2Spritz a skillet with cooking spray and saute the chicken, turning to cook on all sides. Remove from skillet and set aside.
3Make the dressing by mixing together the blue cheese, scallion, sour cream, salt, and pepper.
4Melt the butter in the microwave and mix with the salsa. Dip the chicken into the mixture to coat.
5Cut the bread open and fill with the chicken. Top with a piece of lettuce and drizzle with dressing.
