When spice, crunch and flavor is what you want in a sandwich, why not try this Buffalo Chicken Sandwich. It is perfect for a week night dinner because it is 490 calories and only takes 25 minutes to prepare. The buffalo sauce in this recipe packs a mean punch with paprika and cayenne pepper. Top the chicken breasts with salsa, crumbled blue cheese, light sour cream, and scallions for a hearty meal in a bun.

Ingredients

  • 2 boneless skinless chicken breasts (medium, sliced into strips)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 tablespoon cayenne
  • salt and ground black pepper
  • cooking spray
  • 1 tablespoon margarine (light)
  • 2 tablespoons salsa (prepared spicy)
  • 4 tablespoons blue cheese (crumbled)
  • 4 tablespoons light sour cream
  • 1 scallion (stalk, minced)
  • salt and ground black pepper
  • 2 sandwich rolls (or baguettes)
  • 2 leaves lettuce

Directions

  1. Mix the chicken with the olive oil, paprika, cayenne, salt, and pepper.
  2. Spritz a skillet with cooking spray and saute the chicken, turning to cook on all sides. Remove from skillet and set aside.
  3. Make the dressing by mixing together the blue cheese, scallion, sour cream, salt, and pepper.
  4. Melt the butter in the microwave and mix with the salsa. Dip the chicken into the mixture to coat.
  5. Cut the bread open and fill with the chicken. Top with a piece of lettuce and drizzle with dressing.

I needed a recipe to spice up my kids lunch for school since they were bored with their regular lunches. This was a delicious option and have continued to make them for home lunches as well. Very quick and Easy 5 star recipe that everyone seems to enjoy.
