Made with a combination of buckwheat and regular flour, these cookies are sweetened with raw sugar for a healthier cookie option to add to your repertoire. Prepare the dough and let chill for at least one hour in the refrigerator before shaping and baking. Sprinkle the cookies with raw sugar before baking for a sweet and crunchy flair.

Ingredients

  • 200 grams buckwheat flour
  • 100 grams flour
  • 125 grams salted butter
  • 120 grams raw sugar
  • 1 egg
  • 1/2 teaspoon baking powder
  • raw sugar (for sprinkling)

Directions

  1. Beat the butter with the sugar, then add the egg and next, add the two types of flour sifted with the baking powder.
  2. Knead quickly, then shape the dough into a ball, cover it in plastic wrap and refrigerate it for at least one hour.
  3. Roll out the dough with a rolling pin, sprinkle it with the raw sugar and then roll the rolling pin over the dough for the sugar to adhere well to the sheet of dough.
  4. Use a cookie cutter of your choice to cut out the cookies.
  5. Place the cookies on a wax paper lined cookie sheet and bake at 180C for approximately 20 minutes.
  6. Remove the cookies from the oven and cool on a wire rack.

I have never made buckwheat cookies before and would have to say that this is an all around 5 star recipe. These cookies were slightly hard and seemed to crumble apart whenever you took a bite. They had the perfect amount of sweetness to them and I plan to make this recipe again in the future.
