Description

Requiring just 7 simple ingredients, these Buckwheat Cookies are great cookie to whip up when you have guests coming over. Made with a combination of buckwheat and regular flour, these cookies are sweetened with raw sugar for a healthier cookie option to add to your repertoire. Prepare the dough and let chill for at least one hour in the refrigerator before shaping and baking. Sprinkle the cookies with raw sugar before baking for a sweet and crunchy flair.

Ingredients

200 grams buckwheat flour
100 grams flour
125 grams salted butter
120 grams raw sugar
1 eggs
1/2 teaspoon baking powder
raw sugar (for sprinkling)

Directions

1Beat the butter with the sugar, then add the egg and next, add the two types of flour sifted with the baking powder.
2Knead quickly, then shape the dough into a ball, cover it in plastic wrap and refrigerate it for at least one hour.
3Roll out the dough with a rolling pin, sprinkle it with the raw sugar and then roll the rolling pin over the dough for the sugar to adhere well to the sheet of dough.
4Use a cookie cutter of your choice to cut out the cookies.
5Place the cookies on a wax paper lined cookie sheet and bake at 180C for approximately 20 minutes.
6Remove the cookies from the oven and cool on a wire rack.
