Ingredients

  • 2 teaspoons oil
  • 1/4 pound potatoes (peeled and chopped)
  • 1/4 pound brussels sprouts (halved)
  • 1 cup vegetable stock
  • 1/3 cup carrots (julienned)
  • 1 3/4 ounces smoked sausage (sliced)
  • 1 pinch nutmeg
  • 1 sprig parsley (chopped)

Directions

  1. Heat oil in a pan and sauté the potatoes and brussel sprouts for about 3 minutes. Pour in the stock, bring to a boil and simmer on a low heat for about 15-20 minutes.
  2. Add the carrots and sausage 5 minutes before the end of cooking. Season with salt, pepper and nutmeg and serve with a sprinkle of parsley.
